Beef Shawarma Skewers

Prep Time: 15 mins | Cooking Time: 5 mins | Serves: 4 (makes 8 skewers)

Ingredients

  • 600g beef sirloin, sliced in long thin strips
  • 8 x long bamboo BBQ skewers
  • Greek yoghurt
  • 1 x red onion, cut in petals and grilled
  • For the marinade
  • 1 garlic clove, crushed
  • 1 lemon, zested and juiced
  • 100ml olive oil
  • 2 tsp ground cumin
  • 2 tsp sweet paprika
  • 2 tsp ground coriander
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp ground allspice
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp ground cardamom
  • 20g VEGEMITE

Method

1. Soak bamboo skewers in water for at least 10-15 minutes. This will prevent them from burning on the BBQ.

2. Make the marinade by combining the spices, garlic, lemon and VEGEMITE.

3. Mix the marinade with the beef and allow to sit for 15-20 mins.

4. Thread the beef on to the bamboo skewers evenly.

5. Place the skewers on to a hot BBQ or grill plate and cook for 2-3 minutes each side or until well caramelised.

6. Serve with yoghurt and grilled red onion petals.
